Backup:
Backups within Stockbook can and SHOULD be done OFTEN, even if you are on an Agrisphere database. You can never have too many backups.
Restore:
As a general rule you should not restore a backup into an Agrisphere database. Doing so can cause irrevocable damage/corruption to the data in the server database.
There is an exception though, where you can restore a backup into an Agrisphere database. You can safely restore a backup into an Agrisphere database IF AND ONLY IF you have NOT SYNCED since the backup was done. Note that ALL data that was added/changed since the backup was done will be lost when you restore.
An example: You want to import a lot of data into Stockbook, so you do a backup before you begin. You then import and find that some of the data was not as you expected. You can in this instance restore that backup you made earlier without affecting the Agrisphere database.
